- 1.5 lbs Ground Beef
- 2 tsp garlic powder (can use garlic minced garlic)
- 1 medium onion diced
- 1 Green peppers (diced or pureed)
- 1 15oz can of Chili beans (Brooks or store brand is fine)
- 1 14oz can crushed tomatoes
- 1 14oz can petite diced tomatoes
- 1/2 can tomato paste
- 2 pkgs or 1/2 cup Chili-O Seasoning
- 1 tbls Chili powder
- 2 tsp Cumin
- Salt / Pepper to taste
- Water to thin down
Cooking Instructions:
Use a 6 quart or larger pot to make the chili
- Brown the ground beef with the garlic, and salt/pepper to taste
- Drain the ground beef using a colander
- Leaving the beef in the colander, sauté the diced onion, diced green peppers, and a little salt in the pan. (You can use a small amount of the grease remaining in the pan from the beef or add a little olive oil if needed)
- Add the meat back to the pan and combine with the cooked onions and peppers. (Taste to make sure well seasoned and add more seasoning if necessary)
- Stir in the chili beans
- Stir in the crushed tomatoes, diced tomatoes, tomato paste and about 1 cup of water
- Stir in the chili powder and cumin
- Stir in the Chili-O mix
- Bring to boil and cook for about 15 minutes
- Add more water to get desired consistency
- Taste and more salt/pepper/Chili-O mix to taste
- Reduce to a simmer and let it cook for about an hour, stirring often.
