Chili

  • 1.5 lbs Ground Beef
  • 2 tsp garlic powder (can use garlic minced garlic)
  • 1 medium onion diced
  • 1 Green peppers (diced or pureed)
  • 1 15oz can of Chili beans (Brooks or store brand is fine)
  • 1 14oz can crushed tomatoes
  • 1 14oz can petite diced tomatoes
  • 1/2 can tomato paste
  • 2 pkgs or 1/2 cup Chili-O Seasoning
  • 1 tbls Chili powder
  • 2 tsp Cumin
  • Salt / Pepper to taste
  • Water to thin down

 

Cooking Instructions:

‍  Use a 6 quart or larger pot to make the chili

  • Brown the ground beef with the garlic, and salt/pepper to taste
  • Drain the ground beef using a colander
  • Leaving the beef in the colander, sauté the diced onion, diced green peppers, and a little salt in the pan.  (You can use a small amount of the grease remaining in the pan from the beef or add a little olive oil if needed)
  • Add the meat back to the pan and combine with the cooked onions and peppers.  (Taste to make sure well seasoned and add more seasoning if necessary)
  • Stir in the chili beans
  • Stir in the crushed tomatoes, diced tomatoes, tomato paste and about 1 cup of water
  • Stir in the chili powder and cumin
  • Stir in the Chili-O mix
  • Bring to boil and cook for about 15 minutes
  • Add more water to get desired consistency    
  • Taste and more salt/pepper/Chili-O mix to taste
  • Reduce to a simmer and let it cook for about an hour, stirring often.
